Cookie Recipes?

I'm going to bake cookies for my mom tomorrow, and I'm wondering what type I should make?





I don't exactly want a plain type of suger, chocolate, or peanut butter, since we have/had it...





It would be a bonus if it tastes good with coffee. Yum.





Also, it doesn't have to be cookies, per-say...it could be like, marbled, bar, brownie-ish, etc,.Cookie Recipes?
Monster Cookies


These cookies are great just from the oven, but even more amazing you can freeze them after baking and when you thaw them out they will be just as chewy and good as they were when they were fresh. Recipe is easily halved or doubled. Yummy!

INGREDIENTS :


路 1 cup margarine


路 1 cup butter


路 2 cups light brown sugar


路 2 cups white sugar


路 4 eggs


路 2 teaspoons vanilla extract


路 4 cups all-purpose flour


路 2 teaspoons baking soda


路 1 teaspoon baking powder


路 1 teaspoon salt


路 4 cups rolled oats


路 2 cups semisweet chocolate chips


路 1 cup chopped walnuts





DIRECTIONS :


路 Preheat oven to 325 degrees F (175 degrees C). Grease cookie sheets.


路 In a very large bowl, cream together the margarine, butter, brown sugar and white sugar until smooth. Beat in the eggs one at a time then stir in the vanilla. Combine the flour, baking soda, baking powder, salt and rolled oats; stir into the sugar mixture. Mix in chocolate chips and nuts. Drop by tablespoonfuls onto the prepared cookie sheets.


路 Bake for 14-16 minutes in the preheated oven, or until the edges are golden. If you like chewy cookies, take them out before they look done. Cool on wire racks, store in air tight container.Cookie Recipes?

~Marbled Raspberry Coffee Cake~


Ingredients:


Coffee Cake


* 1 cup flour


* 1/2 cup sugar


* 1 teaspoon baking powder


* 1 teaspoon baking soda


* 1/4 teaspoon salt


* 1(3ounce)package cream cheese, softened


* 1/4 cup margarine or butter, softened


* 1/4 cup milk


* 1 teaspoon grated lemons, rind of


* 1 egg


* 1/4 cup raspberry preserves





Frosting:


* 1/2 cup powdered sugar


* 1 tablespoon lemon juice


* 2 teaspoons margarine or butter, softened


* 1/4 cup sliced almonds





Directions:


1. Heat oven to 350 degrees F.


2. Grease and flour 8-inch square pan.


3. Lightly spoon flour into measuring cup; level off.


4. In small bowl, combine flour and remaining coffee cake ingredients except preserves; blend at low speed until moistened.


5. Beat 2 minutes at medium speed.


6. Spread batter into greased and floured pan.


7. Spoon preserves by teaspoonfuls over batter.


8. Using knife, swirl preserves over top of batter to marble.


9. Bake at 350 degrees F for 25 to 30 minutes or until toothpick inserted in center comes out clean.


10. Cool slightly.


11.In small bowl, combine all frosting ingredients except almonds; beat until smooth.


12. Frost warm cake; sprinkle with almonds.


13. Serve warm.

INGREDIENTS


1 cup butter


2 cups white sugar


1/2 cup unsweetened cocoa powder


4 eggs


2 teaspoons vanilla extract


1 1/2 cups all-purpose flour


1/4 cup coarsely chopped walnuts


1/4 teaspoon salt


1/2 cup miniature marshmallows


1/2 cup butter


1/3 cup milk


1/4 cup unsweetened cocoa powder


1/2 teaspoon vanilla extract


4 cups confectioners' sugar





DIRECTIONS


Put 1 cup butter or margarine into large mixing bowl. Microwave on high 1 to 1 1/2 minutes until melted.


Stir in 2 cups white sugar and cocoa. Add eggs and vanilla; beat vigorously until well-blended. Stir in flour, nuts and salt. Let batter ';rest'; for 10 minutes.


Pour into an 11 3/4 x 7 1/2 pan. Place on a plastic trivet or inverted saucer in oven. Microwave on medium 9 minutes, rotating dish 1/2 turn after 3 minutes.


Microwave on high 3-5 minutes rotating dish 1/2 turn once, until top is mostly dry with moist spots and pick comes out clean. Sprinkle marshmallows evenly over top of cake. Let stand about 5 minutes until marshmallows are slightly melted.


To Make Frosting: Melt 1/2 cup butter in large bowl. Stir in 1/3 cup milk, 1/4 cup cocoa and 1/2 teaspoon vanilla. Add 4 cups confectioners' sugar and beat vigorously until smooth. Spread evenly over marshmallows. Let stand on flat surface 30 minutes until slightly warm or cool completely. Makes 16 very rich servings as this is a very dense cake
This is one of my favorite cookie recipes. My mom used to make these all the time.





PUMPKIN CHIP COOKIES





1 C canned pumpkin


2 C flour


1 C sugar


2 tsp. baking powder


1 egg


陆 tsp. cinnamon (I use 1 tsp.)


陆 C salad oil


陆 tsp. salt


1 tsp. baking soda


1 tsp. vanilla


1 tsp. milk


陆 C chopped nuts


1C chocolate bits








Combine pumpkin, sugar, egg and oil. Mix in flour, baking powder, cinnamon and salt.


Dissolve baking soda in milk and add to pumpkin mixture. Stir in chocolate bits and nuts. Drop by teaspoons onto un-greased cookie sheet and bake 375 degrees for 10 鈥?12 minutes.


NOTE: it is not necessary to sift the dry ingredients.
