What are your favorite Christmas cookie recipes?

I did cutout, black and white (Checkerboard and Pinwheels and etc.), mint and double chocolate cookies. I did Spritz, Coconut macaroons, No bake Oatmeal Chocolate cookies, I did Cinnamon stars and Anise cookies. Now I have run out of ideas but all the cookies are gone so what are your favorite recipes for christmas.What are your favorite Christmas cookie recipes?
SNICKERDOODLES





陆 cup butter, softened 2 teaspoons cream tartar


陆 cup shortening 1 teaspoon soda


1陆 cups sugar 录 teaspoon salt


2 eggs 2 Tablespoons sugar


2戮 cups all-purpose flour 2 teaspoons cinnamon





Heat oven to 375 degrees. In food processor with metal blade, mix thoroughly butter, shortening, 1陆 cups sugar, eggs, 陆 of flour, cream of tartar, soda and salt. When thoroughly blended, add remainder of flour. Shape dough by rounded teaspoonsful into balls.





Mix 2 tablespoons sugar and the cinnamon; roll balls in mixture. Place 2 inches apart on ungreased baking sheet. Bake 8 to 10 minutes or until set. Immediately remove from baking sheet. Makes 6 dozen cookies. Works especially well if there's a southern heritage.


What are your favorite Christmas cookie recipes?
Christmas wreaths!! I believe they are made with corn flakes and you put a bit of green coloring in the mixture. You shape them on the cookie sheet as little wreaths and then add red hots for the holly. Here's a link for the recipe and it even has a little photo of them too! :)

Christmas eve is my family get together and i'm only 18 so i'm not yet expected to buy all of my aunts and uncles gifts yet..but i wouldn't think of just doing nothing for them at all, therefore i plan to make them some kind of cookies or candy and put them in a christmas tin as a gift.

I think an assortment of homemade cookies would be a great gift to give. I like to make chocolate mint cookies and gingerbread cookies to give as gifts around the holidays. Here are the recipes that I use.

during christmas we always make chocolate cookies with peanut butter chips - they are soo good.. maybe not what most people associate with christmas cookies - but i do since thats usually the only time we make them.. dont know why though.. the recipie is on the back of the peanut butter chip bag - very tasty if you have never tried them!


other than that i usually think of fudge or divinity or peanut brittle around the holidays






Fudge is always good lol. follow the recipe on the back of a fluff container, it's super easy and it always comes out right. you can christmas it up by sprinkling green and red m%26amp;ms on the top.
Peppermint bark (recipe cited below) is super super easy to make, and really impressive to give as a gift.

OREO BALLS





1 pkg. Oreo cookies


1 (8 oz) pkg. cream cheese


1 package of White Almond Bark





Crush oreos (you can use a food processor if you have one)


Mix crushed oreos with cream cheese until soft dough forms.


Roll dough into balls.





Place your balls on baking sheet on Parchment paper, wax paper, or aluminum foil. Let set in fridge for at least 4 hours for cream cheese to re-harden.





Melt about 1/2 of almond bark according to package directions. Dip balls in melted bark, then place back in fridge for bark to harden. Serve cold.

MICROWAVE FANTASY FUDGE





3/4 cup butter


3 cups sugar


2/3 cup evaporated milk


12 oz semi-sweet chocolate chips





Microwave butter in a bowl until melted (about 1 minute). Stir in 3 cups sugar, 2/3 cup evaporated milk, mix well.


Microwave mixture on high 3 minutes, stir. Two minutes, stir. Three minutes, stir. Two and one half minutes, stir. Gradually stir in chocolate chips.





Add:


1 jar marshmallow creme


1 tsp. vanilla


Nuts, if desired





Mix well. Pour into greased 9 x 9 inch pan. Cool at room temperature. Makes 3 pounds.

Stained Glass Candy





2 cups sugar


3/4 cup water


2/3 cups light corn syrup


1/4 teaspoon food coloring


1 teaspoon Gourmet Flavoring (Use cinnamon for red, peppermint for green, or lemon for yellow.)


Confectioners鈥?sugar (optional)





Lightly oil a jellyroll pan; set aside.





In a large saucepan, combine sugar, water, and corn syrup. Stir over medium heat until sugar dissolves. Bring mixture to a boil without stirring. When syrup reaches a temperature of 260掳, add food coloring. (Do not stir; boiling action will incorporate color into syrup.) Remove from heat when mixture reaches 300掳, or when a drop of syrup placed in ice water becomes brittle and makes a snapping noise. When mixture stops boiling, add flavoring and stir. Pour mixture onto prepared jelly-roll pan and let cool.





Dust with confectioners鈥?sugar (if desired) and break into bite-size pieces. Store in an airtight container.

BAILEY'S IRISH CREAM TRUFFLES





12 oz semi sweet chocolate


1/4 C Bailey鈥檚


1/4 C heavy cream


2 egg yolks


1 Tbsp. butter





Melt chocolate in a heavy pan on very low temp. Whisk in Bailey鈥檚 and heavy cream. Whisk in yolks one at a tim; then whisk in butter. Mixture will start to thicken; refrigerate overnight or until firm.





Roll into small balls. Dust with xxx sugar or cocoa or chopped nuts or whatever you want. (I did toasted hazlenuts)





Yield: 16.

Ingredients


陆 cup splenda or a mix of honey and splenda ( try to avoid sugar)


6 tablespoons solid vegetable fat or butter


1/8 teaspoon salt


3 table spoon of strong coca tea ( 3 bags in a cup sited for 5 to 10 minutes)


5 or 6 bags of coca tea


1/2 lime or lemon


1 egg ( I love to add an extra one)


About 2-1/3 cups flour, or enough to make a medium soft dough





Instructions











Put fat, salt, liquid coca tea into a bowl, and work with a spoon until creamy.


Add the splenda gradually, stirring constantly until well creamed and white.


Use a mortar or food processor to make a fine powder from the coca tea bags and mix it with the flour.


Mix in the well beaten egg(s), and fold in the flour to a rather soft dough.


Divide into 2 or 3 pieces so as to be handled more easily, and roll out on a well floured board to 1/4 inch thickness.


Cut with a floured biscuit cutter, lay in baking pan, and bake in a medium oven (325 F) .


Line two baking sheets with parchment or Silpats and transfer the cookies to the baking sheets.


Gather the leftover dough and re-roll (and re-chill if necessary) and cut.


Bake each sheet about 15-20 minutes or until the cookies are firm and just starting to color.


Rotate each sheet halfway through for more even baking.


Put cookies on a cooling rack and allow to cool completely.


Will keep in an airtight container for 3-4 weeks.

I don't know, but I ALWAYS put 1/3 less sugar in every cookie recipe I make. I have done it this way for years, and nobody notices. In fact, everyone says they love my cookies.


You can also substitute applesauce or mashed ripe bananas for oil in most baking recipes.


Try doing a search for cookie recipes with oatmeal and raisins. Then reduce the sugar and add applesauce. They are actually better, and more moist prepared this way.

    start with a basic recipe (like a sugar cookie) and then go crazy and add flavors you think would give it a kick!How do you come up with your own cookie recipes?
    You can use recipes that you've already been using, or change them in little ways to personalize them.





    Many, many people who bake cakes use the same recipes as other people, and just add different flavorings, like creme bouquet or wedding bouquet. Lots of people use commercially prepared products, like premade fondant or icing.





    To come up with your own recipes, start with basic recipes that you normally use, and try adding things to them...for example, if you usually use the toll house chocolate chip recipe, try using it, except add a tablespoon of molasses and substitute a cup of wheat flour for one cup of regular flour. Or make sugar cookies with the recipe that you normally use, but add some lime instead of the lemon...just little changes that make the recipe your own.

    You can sub. out margarine for butter. I do it often. I recommend using stick margarine as some of the tub margarines have quite a bit of water in them and it can affect how the cookies bake.





    You will notice slight differences in the cookies. Butter makes cookies crispier and sometimes spread out more on the tray. The only time I use butter anymore is when I'm baking for competitions or for parties because people rave about them then. (the flavor is richer)Does it matter whether I use margarine instead of butter in cookie recipes?
    Yes there is some difference (if you have a very very sensitive palat), but I can assure you that the taste will not be so substantially different that you might be saying ';oh God!'; on using it.





    I have tried using margarine for cakes and stuff (a very mild to no difference there) If you are planning to make a slightly healthier cookie, then shldnt be a problem using it at all, would say go for it.





    However if you are very particular about the taste and are used to the butter flavor - would say stick to it.
    The best results will be as written in the recipe.

    PEANUT BUTTER OATMEAL COOKIES





    1 Cup plain flour


    1 Cup whole wheat flour


    1 tsp baking soda


    1 teaspoon salt





    Whisk together in medium bowl, set aside.





    1 stick unsalted butter, softened


    3/4 Cup creamy peanut butter


    1 Cup white sugar


    1 Cup light brown sugar, packed


    2 eggs


    2 teaspoons vanilla extract, optional





    Mix together in large mixer bowl with electric mixer on HIGH. Once it is thoroughly mixed, add the flour mixture a little at time. Then,





    Stir in:





    2 Cups of quick oats





    If the dough seems dry, add 1 to 2 Tablespoons of skim milk.





    Place by Tablespoonful (cookie scoop) onto cookie sheet lined with parchment paper press with fork or fingers to slightly flatten them. (or make two logs of dough and cut into discs) Bake 8 - 10 minutes in a preheated 375 degree oven.





    Allow cookies to cool on pan one minute before removing to a wire rack. Cool.

    Ingredients


    1 whole large egg, at room temperature


    1 large egg yolk, at room temperature


    1 tablespoon pure vanilla extract


    2 cups flour [see Baker鈥檚 note]

    1 teaspoon ground cinnamon


    3/4 cup [1 1/2 sticks] unsalted butter, melted


    1 cup packed light brown sugar

    2 cups dark-as-you-want-em chocolate chips





    Method


    Heat oven to 325掳. Line cookie sheets with parchment paper.





    Crack the whole egg into a small dish. Add the egg yolk and the vanilla extract; set aside.





    Set a sifter over a small bowl or rest on a piece of wax or parchment paper. Add the flour, baking soda, salt and cinnamon and sift into the bowl; set aside.





    In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the egg, egg yolk and vanilla until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips until evenly distributed.





    Drop cookie dough by the tablespoon measure onto prepared cookie sheets [I keep the measure hot and clean in a tall glass of hot tap water between scoops]. Turn the measured dough over to see which side has the most chips and put that side up. Place any chips that might escape on top. Cookies should be about 2 inches apart. I get 6 cookies on a half-sheet baking pan.





    Bake for 9 minutes. Turn pans back to front and top to bottom and bake another 6 minutes. Remove from oven and cool on baking sheets for a few minutes before sliding parchment with cookies to wire racks to cool completely.





    Store cookies air-tight. To ensure next-day freshness, put a slice of bread in the container with the cookies.





    Makes 2 1/2 dozen.





    Baker鈥檚 note: I employ the scoop and sweep method of measuring flour. Mix flour to aerate. Scoop and heap into measuring cup over flour container. With a butter knife, tap the handle of the measure 3 times. Slide the blade evenly across the flour to level it off.
    This is a fave at our home as cookies or bar cookies ....I love to make it and put it is a 9x13 pan and bake and 3 minutes before it is done sprinkle choc chips over it and then spread the warm choc when it comes out of the oven ....my son loves these bars.

    Ingredients:


    1 cup shortening


    1 cup peanut butter


    1 cup sugar


    1 cup packed brown sugar


    3 eggs


    3 cups all-purpose flour


    2 teaspoons baking soda

    Directions:


    In a bowl, cream shortening, peanut butter and sugars. Add eggs, one at a time, beating well after each addition. Sift together flour, baking soda and salt; add to creamed mixture. Roll into 1-1/2 in. balls and place 3 in. apart on ungreased baking sheets. Flatten with a fork if desired. Bake at 375掳 for 10-15 minutes. Yield: 3-4 dozen.

    2 c shortening


    1 c sugar


    1 c brown sugar


    2 eggs


    4 c flour


    1 t soda


    1 t salt


    1 t vanilla


    1 c coconut


    1 c chopped pecans





    Cream shortening, sugar and eggs. Sift flour, soda and salt. Add to creamed mixture. Add vanilla, coconut and pecans. Roll into small balls and press down with a glass dipped in flour for each cookie. Bake at 350 degrees for 7 minutes.





    Moon Rocks





    1 lb powdered sugar


    1 stick margarine (melted)


    1 6 oz can frozen orange concentrate (thawed)


    1 t grated orange peel


    1 c pecans (ground)


    1 lb Vanilla wafers (crushed)


    1 lb shredded coconut (divide in 2 portions)





    Combine all ingredients except half of the coconut. Mix thoroughly. Shape into balls and roll into remaining coconut. Makes 96 confections.

    Christmas Tree Cutout Sugar Cookies





    1/3 cup butter, softened


    1/3 cup shortening


    3/4 cup granulated sugar


    1 tsp baking powder


    1/8 tsp salt


    1 large egg


    1 tsp vanilla


    2 cups all-purpose flour


    2- 3 assorted colors of paste food coloring





    In a medium mixing bowl beat butter and shortening with an electric mixer on medium to high speed for 30 seconds. Add granulated sugar, baking powder, and salt. Beat until combined, scraping sides of bowl occasionally. Beat in egg and vanilla until combined. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour.





    Divide dough into portions, tinting each portion of dough with a different color of food coloring. Knead coloring into dough until well mixed. Cover and chill about 1 hour or until dough is easy to handle.





    On a lightly floured surface, roll a portion of the dough at a time to 1/8-inch thickness. Using a 2-1/2-inch cookie cutter, cut dough into desired shapes. (For 5-1/4-inch cookies, roll dough to 1/4-inch thickness.) Place cutouts on an ungreased cookie sheet. Refrigerate cutouts for 15 minutes. Using small cookie cutters, make smaller cutouts and fill each opening with another color of dough.





    Bake in a 375 degree F oven for 7 to 8 minutes for smaller cookies or about 10 minutes for larger cookies or until edges are firm and bottoms are very lightly browned. Cool on cookie sheet for 1 minute. Transfer cookies to a wire rack; cool.

    why don't you just make muffins out of them and buy cookie mix to make cookies? If you don't have milk, you can use water. But in the time you're waiting for replies on here, you could have went to the store and bought milk!

    1 1/2 cups finely ground almonds


    4 1/2 teaspoons vanilla extract

    1/3 cup confectioners' sugar for rolling


    DIRECTIONS


    Preheat oven to 325 degrees F (165 degrees C).


    Cream butter or margarine in a bowl, gradually add confectioners' sugar and salt. Beat until light and fluffy. Add almonds and vanilla. Blend in flour gradually and mix well.


    Shape into balls (or crescents) using about 1 teaspoon for each cookie. Place on ungreased cookie sheets, and bake for 15-20 min. Do not brown. Cool slightly, then roll in the extra confectioners' sugar.

    YOU DONOT HAVE TO USE UNSALTED BUTTER AND YOU CAN USE PECANS INSTEAD OF ALMONDS.
    In a bowl mix any nuts, dried fruits such as raisins, craisins, prunes, dates and/or apricots, then add mini marshmallows or large chopped up marshmallows and any breakfast cereal. In another bowl melt chocolate chips in the microwave. Add a bit of peanut butter to the melted chocolate if wanted. Mix all together and immediately form into balls on a cookie sheet lined with wax paper. Yummy and no bake and very forgiving! Store in the fridge.

    NO-BAKE COOKIES





    2 Cups sugar


    1/4 Cups cocoa


    1/2 Cups milk


    1 stick of butter


    1 tsp vanilla


    pinch of salt --- about 1/8 teaspoon


    1/2 Cups peanut butter


    3 Cups quick-cooking oats





    Use a wire whisk to stir together the sugar and cocoa in a large pot. Whisk in the milk and add the butter. Put it on a stove burner set at medium heat, and, once the butter has melted, wait for it to get bubbly (stirring it almost constantly). After it's bubbly, set off burner for one minute, then add vanilla, salt and peanut butter.





    Stir them in thoroughly. Then stir in the oats.





    Drop by spoonful onto waxed paper and allow to cool. Refrigeration is not necessary, just store in a cool place in a well-sealed container.





    You can also grease an 8 or 9 inch dish, then pour the cookie batter into it. Allow to cool. Cut into bars. You can refrigerate it if you prefer.

    sprinkle lightly over each cookie. Bake 8-10 minutes. Cool 1 minute on cookie sheet; remove to wire cooling rack.

    OATMEAL RAISIN COOKIES made with whole wheat flour





    Whisk together:





    1 Cup plain flour


    1 Cup whole wheat flour


    1 teaspoon baking soda


    1 teaspoon salt


    3/4 teaspoon ground cinnamon

    1 Cup white sugar


    1 Cup light brown sugar, packed


    2 eggs

    I'm with Clare... Salt dough, properly dried and sprayed with clear lacquer or paint. I have some salt dough ornaments my kids made in preschool, from 3 to 9 years ago. Some of them have crumbled, but they haven't molded.





    Make sure you dry them THOROUGHLY on cooling racks over a couple of days at least. And don't store near any source of moisture (like on the counter near the dishwasher).
    4 cups flour

    1-1/2 cups hot tap water

    Mix the salt and flour in a large bowl.





    Gradually add the water* to the dough as you mix until you have soft dough.

    Whole wheat flour has a different taste from white. So while it might work in some recipes, it wouldn't work in many.





    Now, it looks to me like you're looking for healthy alternatives to 'traditional' ingredients for your recipes. You could use oat flour instead of white. On one of my lists, someone mentioned that you could make oat flour by running oatmeal through a food processor. I think it might even work: When I have oat bran in the house, I will frequently substitute half the flour in the recipe with bran, and my taste buds don't know the difference.

Be aware though, that the cookies will not spread and will come out in whatever shape you put them in as so you might want to shape the cookies a bit before you bake them.I've heard you can use applesauce in place of butter in cookie recipes?

    I don't have a recipe for you, but I do have some advice. I am in the Navy, and have many a care package sent out to me. Anyone who has ever been overseas will tell you, the postal service, our's and any other country's, doesn't really care about packages. Think of it about the same as putting your luggage onto a plane.





    My mother, the amazing woman that she is, found a way to protect those baked goodies you want to send. Otherwise, the individual recieving them, will be given a box of crumbs.





    Once you have baked the cookies, allowed them to cool and are ready to package them, here is what you need to do.





    First, you need the following items:





    Box of wax paper


    Several Pringles cans





    Second, individually wrap each cookie in wax paper, as if you were packing your good dishes for a move.





    Third, once all of the cookies are wrapped, place each one into the pringles can, like they were a pringle. Once you have filled the can, tape it up and put it into the box.     BEST sugar cookies ever. Sour cream is the key!





    Cream together:


    2 cups of sugar


    3/4 cup of butter


    2 eggs


    1/2 cup of sour cream (or more!)





    Sift together than add to liquid:


    1 teaspoon baking soda

    vanilla to flavor


    Approximately 4 cups of flour.





    You need a good mixer to incorporate that much flour! I have a Kitchenaid.





    Halve the dough and chill for about an hour. Heat the oven to 375.





    Roll out on a floured surface. Roll the dough kind of thick (at least 2 cm). Cut into whatever shapes you want. Bake for 8-10 minutes (less is better). I like to use parchment paper instead of foil and no-stick spray.

    hi, my daughter is 11 and she loves making these. They are SO YUMMY and really easy.


    you will need:


    1 can sweetened condensed milk


    1 packet nestle choc chips


    3 cups self raising flour (all purpose flour)


    1/4 cup white sugar


    1/4 cup butter


    Turn on your oven to180o C / 356 F (moderate). Grease or cover your cookie sheets with baking paper (I use that - then you don't have to wash the sheets!)


    Melt the butter in a big bowl in your microwave (1 minute)


    Stir in the flour, the sugar and the condensed milk.


    Stir in the choc chips (make sure you put them in last or they'll melt in the hot butter and you'll have pooey looking cookies).


    Roll into balls and put on your cookie sheet.


    Bake in your oven for about 8 minutes (keep looking at them - as soon as the edges start to get just light brown take the cookies out).


    Let them cool. The outside will be crisp and the inside soft and chewy. They are so good and so delicious.

    PEANUT BUTTER BUTTERSCOTCH COOKIES





    1 cup peanut butter


    1/2 cup Nestles Butterscotch morsels


    1 cup sugar


    1 egg


    1/4 teaspoon vanilla





    Combine all ingredients. Form dough into balls. Place on a cookie sheet. Press with a fork to flatten.


    Bake in a preheated 350F degree oven for 10 minutes, watching carefully as you do not want to overbake or the cookies will be dry.





    Remove to cool on wire racks. Store in an airtight container.

    2 Stir together butter, sugar and 1 teaspoon vanilla in large bowl. Add 2 eggs; stir until blended. Stir together flour, cocoa, baking powder and salt. Add to egg mixture, stirring until blended. Spread in prepared pan. Bake 20 minutes.


    3 Meanwhile, stir together sweetened condensed milk, peanut butter, remaining egg and remaining 1 teaspoon vanilla extract. Pour evenly over hot brownie.     4 Place reserved chips and shortening in small microwave-safe bowl. Microwave at HIGH (100%) 30 seconds; stir. When drizzle is firm, cut into bars. Store loosely covered at room temperature.

    2 tablespoons finely grated lemon zest (about 2 lemons)


    2 (9 1/4 by 10-inch) sheets puff pastry (about 9 ounces each), thawed


    1 tablespoon unsalted butter, softened


    1/2 cup yellow sanding or white granulated sugar, or a combination (See Cook's Note.)





    Instructions


    Preheat the oven to 375 degrees F. Line a cookie sheet with parchment paper or a silicone sheet.





    Pulse the granulated sugar and lemon zest in a food processor until fine and fragrant.





    Lay 1 of the puff pastry sheets on a lightly floured work surface. Brush the sheet with about half of the butter and sprinkle with half of the lemon-sugar. Lightly press sugar into the pastry with a rolling pin. Place the other pastry sheet on top, brush with the remaining butter and sprinkle with remaining sugar. Working quickly and efficiently, remove the cookies from the oven -- if they have lost their shape, gently roll them back together. Let cool on the pan for a minute to set.     Sift flour with baking soda and salt, set aside. In a large bowl, cream butter and sugars until light and fluffy.     this may sound like a cop-out but the recipie on the back of the nestle chocolate chips is the best choc. chip cookie ever.
    INGREDIENTS:

    * 1 cup white sugar


    * 1 cup packed brown sugar

    DIRECTIONS:





    1. Preheat oven to 350 degrees F (175 degrees C).


    2. Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.


    3. Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.

    Cappuccino Flats Cookie Recipe





    2 oz. unsweetened chocolate


    2 C. flour


    1 t. ground cinnamon


    1/4 t. salt


    1/2 C. plus 1 1/2 T. solid vegetable shortening (divided)


    1/2 C. (1 stick) butter


    1/2 C. granulated sugar


    1/2 C. packed brown sugar


    1 T. instant coffee


    1 t. water


    1 egg


    1 1/2 C. semisweet chocolate chips


    Heat unsweetened chocolate in microwave just until melted; cool slightly.


    In separate bowl, sift together flour, cinnamon and salt. In large bowl, beat the 1/2 cup shortening and butter until softened. Add sugars and beat until fluffy. In separate bowl, dissolve coffee crystals in water.


    Add coffee mixture, egg and melted chocolate to butter mixture and beat well. Gradually add flour mixture and combine thoroughly. Cover and chill in bowl about 1 hour. Shape into two 7-inch rolls, wrap with wax paper and chill several hours, or overnight.


    Cut into 1/4-inch slices and place on ungreased cookie sheet. Bake at 350 degrees for 10 to 12 minutes or until edges are firm. Allow cookies to cool completely on baking rack.


    Over low heat, melt chocolate chips and remaining 11/2 tablespoons shortening. Dip one half of each cookie into the chocolate sauce and placed on waxed paper until the chocolate has set.     1 teaspoon baking soda


    3/4 cup all-purpose flour


    2 tablespoons boiling water


    1/2 teaspoon vanilla extract (optional)





    Directions:


    In a saucepan, melt butter, treacle, soda and sugar, mixed with boiling water. Bring to a slow boil and add dry ingredients, stirring well. Stir in vanilla. Remove from heat and drop by tablespoons onto a buttered baking sheet.

    1/4 c Sugar; Granulated





    1 lb Cream Cheese


    1/2 c Sugar; Granulated


    3 Eggs; Large, Separated


    1/4 c Unbleached Flour


    1 ts Lemon Rind, Grated


    2 ts Lemon Juice


    1 ts Vanilla Extract


    1/2 c Heavy Cream


    2 tb Passion Fruit; **





    * Use sweet cream butter and DO NOT substitute margarine. **


    Make the passion fruit pulp from fresh passion fruits or substitute

    CRUST: If you are prebaking the shell, preheat the oven to 350

    the sides of an 8-inch springform pan. Smooth the mixture to form an


    even layer on the bottom and sides. Bake the crust in the oven for 10


    minutes and let cool to room temperature before filling. NOTE: This


    crust can be chilled for 5 to 10 minutes in the freezer until it is


    set but is not recommended in this recipe. CHEESECAKE: Preheat the


    oven to 300 degrees F. In a large mixing bowl, beat the cream cheese


    and sugar until light and fluffy. Add the egg yolks, one at a time,


    beating well after each. Beat in the flour, lemon rind, lemon juice,


    and vanilla until just mixed. Whip the cream until stiff in a medium


    mixing bowl. Set aside. In another mixing bowl, beat the egg whites


    until they form stiff peaks, then fold them into the cheese mixture.


    Fold in the reserved whipped cream. Stir in the passion fruit pulp


    then pour the mixture into the prepared crust and bake fro 45 minutes


    to 1 hour.


    Cool, in the oven, to room temperature, then chill.
