Does anyone know any good diabetic cookie recipes out there?

I am working with a school that does not allow any nut products. Also I do not wish to use artificial sweetning agents (Splenda, etc) or any sugars, including white or brown.





Anyone???Does anyone know any good diabetic cookie recipes out there?
Banana Cookies -- 36 cookies


3 ripe bananas


2 cups oatmeal


1 cup dates, pitted and chopped


鈪?cup oil


1 teaspoon vanilla


In large bowl, mash the bananas. Stir in oats, dates, oil and vanilla. Mix well, allow to sit for about 15 minutes.





Preheat oven to 350 degrees. Drop cookies by teaspoonfuls onto ungreased baking sheet. Bake for 20 minutes or until lightly browned. Remove to rack to cool.





And here is a recipe for muffins:





Fruit Muffins -- 12 muffins


1 cup chopped dates


陆 cup raisins


陆 cup chopped prunes


1 cup water


陆 cup butter, cubed


录 teaspoon salt


2 eggs


1 teaspoon vanilla


1 cup all purpose white flour


1 teaspoon baking soda


陆 teaspoon baking powder


Preheat oven to 350 degrees. Line muffin pan with paper cups, spray with non stick spray.





In saucepan over medium high heat, combine dates, raisins, prunes and water. Boil for 5 minutes, then stir in butter and salt. Remove from heat and let cool.





When fruit mixture is cool, transfer to large mixing bowl. Beat in eggs and vanilla. In small mixing bowl, stir together flour, baking soda and baking powder, then blend into fruit mixture. Spoon into muffin cups, distribute evenly.





Bake for 15 - 20 minutes or until toothpick inserted into center comes out clean. Let cool 5 minutes before serving.Does anyone know any good diabetic cookie recipes out there?
You can leave out any nuts from any recipe. They are for flavoring mostly and can be eliminated.





You can leave out any extracts. They are purely for flavoring and won't affect the foods at all. You can change flavors of the extracts also if you wish.





Sugar itself is not the problem with most of us diabetics. It is the flours used in these products.





Most recipes you can cut the sugar in half and it doesn't matter much. They have too much sugar in them anyway.
