1/4 of a cup of oats

I don't have eggs and I've heard if you don't have eggs then the cookies will be hard.What can I substitute the eggs with that will make the cookies soft?What are some simple cookie recipes?
No bake cookies are the best. And super easy to make. You'll need more oatmeal though.
INGREDIENTS
* 1 3/4 cups white sugar
* 1/2 cup milk
* 1/2 cup butter/margarine
* 4 tablespoons unsweetened cocoa powder
* 1/2 cup crunchy peanut butter
* 3 cups quick-cooking oats
* 1 teaspoon vanilla extract
DIRECTIONS
1. In a medium saucepan, combine sugar, milk, butter, and cocoa. Bring to a boil, and cook for 1 1/2 minutes. Remove from heat, and stir in peanut butter, oats, and vanilla. Drop by teaspoonfuls onto wax paper. Let cool until hardened.What are some simple cookie recipes?
No idea about the eggs, maybe just add more milk, or whip the milk a bit to make it frothy??
Peanut Butter Cookies:
1 cup (260g) crunchy peanut butter
1 cup (200g) brown sugar
1 tsp bicarbonate of soda
1 egg, lightly beaten
1 cup (185g) dark choc bits
Preheat oven to 180掳C. Line base of 2 baking trays with non-stick baking paper.
Using electric beaters, cream butter, vanilla and brown sugar in a large bowl until smooth (do not overbeat). Beat in egg. (or frothy milk lol)
Sift flours and cocoa together. Add flour mixture and choc bits to butter mixture, stir well to combine.
Place tablespoons of mixture onto prepared trays, leaving about 6cm between each. Bake, in batches, for 12-15 minutes or until just firm on the surface. Stand cookies on tray for 5 minutes then transfer to a wire rack to cool completely.
If you don't have brown sugar that's fine, it's probably better with regular or caster anyway. And you could add oats, cinnamon and vanilla it'd be nice.
