ROCKR ROAD COOKIES
1 cup semisweet chocolate chips
1/2 cup butter or margarine
1 1/2 cups all-purpose flour
1 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon vanilla
1/4 teaspoon salt
2 eggs
1 cup chopped nuts
48 (about) miniature marshmallows
Melt 1/2 cup of the chocolate chips and the butter in 1-quart saucepan over low heat, stirring occasionally, until smooth; remove from heat. Cool slightly.
Heat oven to 400潞. Mix melted chocolate mixture, flour, sugar, baking powder, vanilla, salt and eggs in large bowl with spoon. Stir in nuts and remaining 1/2 cup chocolate chips.
Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Press 1 marshmallow into center of each cookie. Bake 8 to 12 minutes or until almost no indentation remains when touched in center. Immediately remove from cookie sheet to wire rack.
A really simple cookie recipe that anyone can make uses a cake mix.
Here are the ingredients for Cake Mix cookies:
1 boxed cake mix, flavor of your choice, mixed with
1 stick of melted butter or margarine
2 eggs, lightly beaten
1 teaspoon vanilla
1 cup of your choice nuts, flavored chips, raisins, coconut or craisens, etc
Mix all together and drop by rounded teaspoonfuls onto a lightly greased cookie sheet. Bake for 8-10 minutes in a preheated 350 degree oven. Let set briefly (minute or so) on cookie sheet before removing to cool completely.
This makes very soft, moist cookies. Just be careful to avoid overbaking. I like mine a little soft %26amp; gooey.
Some flavor combinations include using a regular yellow cake mix with chocolate chips to get a variation of chocolate chip cookies. A chocolate cake mix with chocolate, white chocolate, or swirled chips is good also. A personal favorite of mine is a lemon cake mix with a cup of coconut or dried cranberries (craisins).

Gosh! i wish i knew where to find the recipe but my Oma used to make these hazelnut drop cookies, they were probably baked at a low temperature, but on the bottom of these cookies were little round wafers, like communion wafers, or you might want to call them rice paper rounds. They were chewy and moist and nutty.
Try some German cookies. Germany is renowned for cookies at Christmas but you can bake them all year round really.
