Other than chocolate chip cookies, what are some good cookie recipes?

I'm trying to diversify in the field of cookie baking, and I need some help!Other than chocolate chip cookies, what are some good cookie recipes?
Here are two of my favorite cookie recipes! Enjoy!








-Thumbprint Cookies


1/4 cup packed brown sugar


1/4 cup shortening


1/4 cup butter, softened


1/2 teaspoon vanilla


1 egg, separated


1 cup flour


1/4 teaspoon salt


3/4 cup finely chopped nuts

Heat oven to 350*.


Cream sugar, shortening, butter, vanilla and egg yolk.


Stir in flour and salt until dough holds together.


Shape into 1 inch balls.


Beat egg white slightly.


Dip each cookie ball in the egg white; roll in the nuts.


Place 1 inch apart on cookie sheet.


Press thumb deeply in center of each.


Bake until light brown, about 8-10 minutes.


Remove from cookie sheet, cool.


Fill thumbprints with jelly.








-Snickerdoodles


1 cup butter


1 1/2 cups sugar


2 large eggs


2 3/4 cups flour


2 teaspoons cream of tartar


1 teaspoon baking soda


1/4 teaspoon salt


3 tablespoons sugar


3 teaspoons cinnamon





Preheat oven to 350掳.


Mix butter, 1 1/2 cups sugar and eggs thoroughly in a large bowl.


Combine flour, cream of tartar, baking soda and salt in a seperate bowl.


Blend dry ingredients into butter mixture.


Chill dough, and chill an ungreased cookie sheet for about 10-15 minutes in the fridge.


Meanwhile, mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl.


Scoop 1 inch globs of dough into the sugar/ cinnamon mixture.


Coat by gently rolling balls of dough in the sugar mixture.


Place on chilled ungreased cookie sheet, and bake 10 minutes.

Oatmeal Butterscotch


Old Fashioned Sugar (Try making the cookies, and adding some M%26amp;Ms right before baking - just press into the top)





You can make Peanut Butter cookies in mini muffin tins, then once they're cooled, take them out - there will be a small depression in the center of the cookie/muffin - fill this with chocolate frosting.
Peanut Butter Chocolate Chip Cookies





INGREDIENTS


1 1/2 cups all-purpose flour


1 teaspoon baking soda


1 cup butter or margarine, softened


1/2 cup creamy or chunky peanut butter


1/2 cup SPLENDA庐 Sugar Blend for Baking


1/2 cup packed SPLENDA庐 Brown Sugar Blend


1 teaspoon vanilla extract


1 large egg


1 1/3 cups NESTLE庐 TOLL HOUSE庐 Peanut Butter %26amp; Milk Chocolate Morsels


DIRECTIONS


Preheat oven to 375 F.


Combine flour and baking soda in small bowl. Set aside.


Beat butter, peanut butter, SPLENDA庐 Sugar Blend for Baking, SPLENDA庐 Brown Sugar Blend and vanilla extract in large bowl until creamy. Beat in egg. Gradually beat in flour mixture. Stir in morsels.


Drop dough by rounded tablespoon onto ungreased baking sheets. Press down slightly with bottom of glass dipped in SPLENDA庐 Sugar Blend for Baking.


Bake for 8 to 10 minutes or until edges are set but centers are still soft. Cool on baking sheets for 4 minutes. Remove to wire racks to cool completely.

Oatmeal Raisin Cookies-Very High Fiber and you can even adjust %26lt;substitute%26gt; the recipe to fit your dietary needs or taste.





2 Cups Uncooked Oatmeal


1/2 Cup Butter %26lt;substitute%26gt;


1 Cup Raisins


1 Egg %26lt;substitute%26gt;


4 Teaspoons Sugar %26lt;substitute%26gt;


Pinch of Cinnamon to taste


Preheat oven to 375.


If you don't have an electric mixer, mix the dry ingredients separately.


Melt ';butter';.


Mix all together in a big bowl.


Do not eat the batter once the raw egg is added.


Spoon out onto a greased %26lt;PAM or cooking spray%26gt; pan.


Cook for 15 minutes or until the bottoms are browned.


ENJOY!!


I like them right out of the oven with some milk.
