olive oil is too strong. butter is always the best.
remember, butter- not margerine of oil spread.
Every time I have attempted to substitute olive oil for butter in any type of cookie, they have turned out either much too moist or very thin and crunchy (and black). I think the olive oil weighes down the flour more than butter, and depending on the recipe, messes up the dough. I would only try it if you are very patiant and have a lot of flour and sugar.

You can, but it will tend to be a softer cookie %26amp; will spread more. If it's a bar cookie it will work OK.
