Any good cookie recipes that you have personally used?

I have been badgered by my other half to bake cookies for so long now that I've broken and I will do it!





I have everyday ingredients like butter, flour. I also have vanilla extract and chocolate chips.





I'd like a vanilla or chocolate chip cookie recipe if you have a good one. Could you put them together?Any good cookie recipes that you have personally used?

This is a recipe that my mom used to make when I was little. I absolutely love these cookies and they are different than your ordinary chocolate chip cookies. I highly recommend it.





PUMPKIN CHIP COOKIES





1 C canned pumpkin


2 C flour


1 C sugar


2 tsp. baking powder


1 egg


½ tsp. cinnamon (I use 1 tsp.)


½ C salad oil


½ tsp. salt


1 tsp. baking soda


1 tsp. vanilla


1 tsp. milk


½ C chopped nuts


1C chocolate bits





Combine pumpkin, sugar, egg and oil. Mix in flour, baking powder, cinnamon and salt.


Dissolve baking soda in milk and add to pumpkin mixture. Stir in chocolate bits and nuts. Drop by teaspoons onto un-greased cookie sheet and bake 375 degrees for 10 – 12 minutes.


NOTE: it is not necessary to sift the dry ingredients.
one recipe i have off hand is one called a magic bar.


melt 1 cup fo butter and add 3 cups of graham cracker crumbs. press in a 9 x 13 pan evenly. then pour 1 can of sweetened condensed milk and spread evenly over graham cracker crumbs. the ontop fo that, add some shredded coconut, chocolate chips and walnuts .bake at 350 degrees f. for aprox 20 minutes, or till it looks golden and not so wet looking. enjoy.

CAKE MIX COOKIES


(I make these at Christmastime for gift giving)





White Cake Mix


2 Tablespoons water


2 eggs


1/2 cup cooking oil


1 teaspoon almond extract


1/2 cup chopped nuts


powdered sugar





Mix all ingredients, except powdered sugar.





Drop batter (about a teaspoon per cookie) into a bowl of powdered sugar.





Roll in sugar until it is an approximate shape of a ball.





Place ion a lightly greased cookie sheet.





Bake at 350 degrees about 18 minutes, until lightly browned.





Cool on wire racks. Makes about 4 dozen cookies.





(HINT: 1.Use any flavoring or cake mix you desire. 2. Might add chocolate chips, optional)








Monster Cookies


(Makes a ‘monster amount)


I found this recipe…but as yet have not tried it.





Cream together: *(use a ‘large’ pan for this)


12 eggs


1 lb soft butter


2 lb brown sugar


4 c. sugar


1 T vanilla


½ tsp salt


3 lb creamy peanut butter


Then add:


18 c. rolled oats


8 tsp baking soda


1 lb M%26amp;M’s plain


1 lb chocolate chips (or butterscotch)


Spoon out and Bake at 325 til done!








Ritzy/Chocolate/Peanut Butter Sandwich Cookies





Ritz crackers


Creamy peanut butter


Chocolate chips





1.) Cover cookie sheet with waxed paper.


2.) Melt the chocolate chips in the double boiler.


3.) Spread peanut butter on a Ritz and top with another cracker.


4.) Dip the sandwich in the melted chocolate use tongs carefully so you don't break the cracker and dip in chocolate…cover completely.


5.) Place the chocolate-covered sandwich on the cookie sheet…and let chocolate set.


Store in air tight container in refrigerator.





I’ve used…graham crackers (break at perforations)….various crackers.





Hint: Might try vanilla wafers…..and maybe fill with some store bought frostings….. or small amount of jam…..or marshmallow crème.








No-Bake Peanut Butter Squares





Ingredients::


1/2cup (1 stick) butter or margarine


2 cups (sifted) powdered sugar


1 1/2 cups graham cracker crumbs


1 cup peanut butter


1 1/2 pkg. (12 squares) Semi-Sweet Baking Chocolate


1/2cup milk (optional)





Directions:


Line 13” x 9” baking pan with foil, with ends of foil extending over sides of pan. Set aside.


Melt butter in large microwavable bowl on HIGH 1.5 - 2½ minutes or until melted.


ADD sugar, graham cracker crumbs %26amp; peanut butter……and milk if needed. Mix well spread into prepared pan.


Microwave chocolate 1.5 – 2 minutes or until melted stirring after each minute. Cool slightly; pour %26amp; spread over peanut butter mixture in pan. Cool. Cut partially through dessert to mark 48 squares. Refrigerate 1 hour or until set.


LIFT from pan, using foil handles. Cut all the way through dessert into squares.





(I used the milk…was easier to spread in pan….I’ve made this also…not bothering to line pan with foil…or not scoring before refrigerating…….served from pan…..let it sit at room temperature before cutting…about 15 – 20 minutes..…easier to cut into serving pieces).





Or even:





Mock Ice Cream Sandwiches





2 whole graham crackers


Cool Whip





Spread a thin layer of Cool Whip on 1 whole cracker….top with remaining cracker….freeze.


Can't get any simpler that that!!


You'll want to make several at a time.....can't eat just one!





HINT: Melt some chocolate and drizzle over top before freezing.

Toll House Chocolate Chip Pan Cookie Bars





2 ¼ cups all-purpose flour


1 tsp. baking soda


1 tsp. salt


1 cup butter or margarine, softened


¾ cup brown sugar, firmly packed


¾ cup white sugar


1 tsp. vanilla extract


2 eggs


12 oz. pkg. semi-sweet chocolate chips





1. Preheat oven to 375 degrees F. and lightly grease a 10'; X 15';

2. Combine flour, baking soda and salt in a large bowl.


3. In a separate bowl, beat together butter, brown sugar, white sugar and vanilla extract.


4. Add eggs, one at a time, beating well after each addition.


5. Mix butter and egg mixture into flour mixture.


6. Stir in chocolate chips.


7. Spread cookie dough on prepare jelly-roll pan.


8. Bake for 20 to 25 minutes or until golden brown.


9. Cool pan on wire rack before cutting into bars.





Yields 48 bars





Cookie Monster's Secret Cookie Dough








¾ cup of butter or margarine, softened


1 cup sugar


2 eggs


1 tsp. vanilla extract


2 ½ cups all-purpose flour


1 tsp. baking powder


1 tsp. salt





1. Cream butter with sugar in a large bowl, using a fork or mixer, blending well.


2. Add eggs and vanilla extract, blending all well.


3. Combine flour, baking powder and salt before gradually adding to butter mixture.


4. Mix everything together with the fork, mixer or your hands.


5. Refrigerate dough for at least 1 hour before using.








Note: Cookie dough placed in a plastic bag or an airtight container can be kept in the refrigerator for up to a week before using.








Cookie Monster's Famous Shape Cookies





1. Preheat oven to 400 degrees F.


2. Remove dough from refrigerator.


3. Sprinkle a little flour on a hard flat, clean surface.


4. Roll or pat dough to about ¼ inch thickness on floured surface.


5. Cut out cookies shapes with floured cookie cutters


6. Place cookies on an ungreased cookie sheet.


7. Bake for 6 to 8 minutes or until edges are browned.


8. Transfer to a wire rack to cool.


9. Frost, decorate or just leave plain.








Surprise Cookies





1 roll (18 oz.) Peanut Butter or Sugar Cookies


18 mini Snickers or Milky Way candy bars








1. Preheat oven to 350 degrees.





2. Divide cookie dough into 18-1 tablespoon pieces and flatten.





3. Place one unwrapped mini candy bar in center of each piece of cookie dough.





4. Form dough into a ball around candy bar.





5. Place cookie balls on greased cookie sheet 2 inches apart.





6. Bake for 10-12 minutes or until golden brown.





Option: Gently blend 1/4 cup of all-purpose flour with cookie dough prior to dividing for firmer dough.








Chewy Chocolate Chip Cookies





1¾ cups all-purpose flour


¾ baking soda


¼ tsp. salt


¾ cup butter or margarine, softened


½ cup brown sugar, firmly packed


½ cup white sugar


1 egg


1½ cups semi-sweet chocolate chips





1. Preheat oven to 325 degrees F.


2. Stir flour, baking soda and salt together using a fork or wire whisk; mix well.


3. In a separate large bowl, beat butter and sugars together until fluffy.


4. Add vanilla extract and egg; beat until well blended.


5. Gradually add flour mixture, beating well after each addition.


6. Fold in chocolate chips and drop rounded teaspoonfuls of dough


onto a cookie sheet, 2'; apart.


7. Bake for 12 to 13 minutes or until lightly browned.


8. Cool on cookie sheet for 1 minute before transferring to a wire rack to cool completely.





Makes 30 cookies








Best Ever Butter Cookies





1 cup butter or margarine, softened


1 cup sugar


1 egg


2 ½ cups all-purpose flour


2 Tbsp. orange juice


1 Tbsp. vanilla extract


1 tsp. baking powder








1. Combine butter, sugar and egg in a large bowl.


2. Beat at medium speed until creamy.


3. Reduce speed to low; add flour, orange juice, vanilla extract and baking powder.


4. Beat until well mixed.


5. Divide dough into thirds; wrap each in plastic food wrap.


6. Refrigerate until firm (about 2 hours or overnight).


7. Heat oven to 400 degrees.


8. Roll out dough on lightly floured surface, one-third at a time (keeping remaining dough refrigerated), to 1/8 to ¼ inch thickness.


9. Cut with 3-inch cookie cutters.


10. Place 1 inch apart onto ungreased cookie sheets.


11. Bake for 6 to 10 minutes or until edges are lightly browned.


12. Cool completely.
