Hi, i love to bake, and i can bake really well. I would love to start my own baking cakes/cookie business, but i cant use the recipes i've been using right?
How do you come up with making your own recipes? like proportions, and know exactly what recipe needs what in it?

You can use recipes that you've already been using, or change them in little ways to personalize them.
Many, many people who bake cakes use the same recipes as other people, and just add different flavorings, like creme bouquet or wedding bouquet. Lots of people use commercially prepared products, like premade fondant or icing.
To come up with your own recipes, start with basic recipes that you normally use, and try adding things to them...for example, if you usually use the toll house chocolate chip recipe, try using it, except add a tablespoon of molasses and substitute a cup of wheat flour for one cup of regular flour. Or make sugar cookies with the recipe that you normally use, but add some lime instead of the lemon...just little changes that make the recipe your own.
I just try a recipe, and then after I eat it, I think what can i add[ or remove?] to make it taste more like something I would bake. Like the coffee syrups that are flavored, I like to add some in my cookies, but thats just my preference.
